Banana Nut Bread

My Mema's recipe made vegan!! I asked her for her Banaba Nut Bread recipe. I made it Vegan and here we are! Moist, soft, and crunchy all in one! This recipe was the first things that I ever made vegan, and its my Mema's, so its one of my favorites. Enjoy! 


3 cups of Organic Unbleached White Flour

1 cup + 1/4 cup of Coconut Sugar

4 tsp baking powder

6 Large Ripe Bananas

3/4 cup of melted Coconut Oil

1 tbs of Vanilla

1 cup of chopped Pecans



1) Pre-heat oven to 325°F.

 2) Sift together the flour and baking powder in a medium size bowl.

3) Add the coconut sugar and pecans. Mix together evenly.

4) Mash the bananas with a fork. (It's okay to have small chunks)

5) Add the vanilla and melted coconut oil to the bananas. Mix.

6) Pour the wet ingredients into the dry ingredients. Mix until combined.

7) Pour mixture into a lightly greased loaf pan and sprinkle a spoon full of coconut sugar on top. 

8) Bake for 1 hour. (Do the tooth pick test and make sure it comes out clean)
