Farmer's Market Sandwich

(Makes 1 sandwich)

I love going to the farmers' market!!!  Thankfully this past spring, my husband and I were home for 2 whole months!  Being home for this long is rare for us, so my mother-in-law and myself made it a point to visit the farmers' market every Saturday!  We bought fresh garlic, fresh onions, fresh peppers, fresh brochen (German bread), fresh spinach, fresh herbs!  The list is endless and we enjoyed shopping, smelling, cleaning, and eating all of these wonderful foods the Lord planted for us! 

One night I was getting ready to make supper and realized we had such bountiful abundance in fresh farmers' market veggies and fresh bread that it would be wonderful as a light supper to make into a sandwich!  The whole family enjoyed it!  It's light!  It's healthy!  And it's so much fun to go to the farmers' market!  Now find your local farmers' market and get cooking!=)

Ingredients
1/2 red bell pepper, sliced
Small hand full fresh spinach
1/2 avocado, sliced
2 sprigs fresh green onion
4 mint leaves
1/2 tablespoon spicy brown mustard

Instructions
Preheat your oven to 105 degrees!

Spread the spicy brown mustard on both slices of farmers market fresh whole wheat bread (or Ezekiel 4:9 bread would be great too)!

Add all of the ingredients to one slice of the bread.  Then add the second slice of bread on top and press firmly down on the sandwich, to help it from falling apart. 

Place in the oven for 15-20 minutes!  Enjoy!
