Raw Chocolate Fudge Cake

Blissful. Creamy. Luscious. Healthy. RAW. Chocolatey. Gooey. Fruity. Perfect. Dessert.

I made this fantastic RAW dessert for my Mama's birthday party a few weeks ago!  She has recently found that conventional desserts hurts her stomach, so she has cut all traditional desserts out of her diet. The only sweetness that her body can handle is RAW, PURE, and NATURAL dessert...like the RAW CHOCOLATE FUDGE CAKE!  So for her birthday, I made her this cake and she was absolutely dazzled by (not only the pretty ribbon) but by how it was the richest, chocolatey cake she had ever tasted!  She said, "Now this is a what a birthday cake is suppose to taste like."  And we think you will think the same!

Ingredients

FUDGE CAKE
-3 cups RAW walnuts
-2/3 cup RAW cacao poweder
-1 1/4 cup pitted Medjool dates

FROSTING
-1/3 cup pitted Medjool dates (soaked for about 15-30 minutes)
-1/4 cup agave syrup
-1 medium avocado (very ripe)
-1/3 cup RAW cacao powder

FILLING
-1/2 cup of raspberries or strawberries
-1/4 cup of crushed walnuts (for garnish)

Instructions
-To make the cake, combine the walnuts,  and cacao powder in the food processor and pulse until it becomes like mill or flour.  Add the dates a few at a time and mix well.  Divide the batter evenly in two and shape into 2 cake like layers.  Set aside.

-To make the frosting, firstly, combine the dates and agave syrup in the food processor and process until a creamy consistency.  Add the avocado and process until smooth.  Lastly, add the the RAW cacao powder and process once again until smooth!

-Place the first layer of the cake on your cake plate (or whatever you are planning on serving the cake on).  Cover the layer with the RAW Chocolate Frosting.  Then sprinkle your raspberries or strawberries.  Stack the second cake on top and cover the whole cake in the frosting!  Add the rest of your chosen fruit on the top!  And you may garnish with extra crushed walnuts, if you like!

MAKE IT PRETTY
*For my Mama's birthday, I spent a little extra time on the decoration for this cake!  For starters, I did not put frosting on the sides of the cake.  Just on the stop of each layer.  Then I placed a pile of raspberries in the very middle while sprinkling the sides with the crushed walnuts!  Then...!  The most exciting part!  I bought some pretty pink ribbon to match the raspberries and tied the ribbon in a bow around the cake!
