Hmmmm......Ahhhh.......PANCAKES! The smell, the light brown color, the fluffy texture, there is just no wrong when it comes to pancakes and I AM THRILLED to tell you this VEGAN version is just as good if not better than any dairy filled pancake I have had in the past. Please know, this is one of the EASIEST recipes we have done!
Now, I don't know about you, but in the Chandler household while I was growing up, breakfast for supper was an extremely common meal for our family! Now that I think about it, I think we only had these when DADDY was cooking supper! =) It was his favorite, as well. I can still see him now, with his oversized t-shirt on, pulling out the old skillet that we had had for AGES! Daddy would have the kitchen full of splattered batter and wonderful smells in minutes! It is just always something special when your dad is cooking in the kitchen!
So today, I am so excited to share with each of you this delicious VEGAN pancake recipe that is so easy and quick! Enjoy! You can have these done in 5 MINUTES!
·1 cup Almond or Coconut milk
·2 TBSP Baking Powder
·1 cup Organic All Purpose While UNBLEACHED Flour
·1/8 TSP Salt
·1 TBS Sugar, your choice
·2 TBSP Coconut Oil
·Warm up your skillet on medium-high heat.
·Whisk all ingredients together in a bowl!
·Once nice and warm, ladle batter into skillet. I usually do four at a time, but it depends on the size of your skillet.
·Once the batter starts bubbling, it is time to flip!
·Flip those babies and wait maybe five minutes and then they are ready to eat!
·Enjoy! Eat with maple syrup, peanut butter and/or fresh fruit!
