Easy Vegan GF Chocolate Chip Cookies

Tonight we made cookies so easy a toddler could do it. Literally. Israel turned the beater on while I was in the other room....

Chocolate Chip Cookies were a household favorite while growing up! They were pretty much the only thing we baked! So when we discovered how easy it was to substitute to make them vegan it was hard to stop myself from making them all the time! 

You can take any box of cookie mix and transform it into vegan! Preferably find a package that does not have corn syrup listed as an ingredient! I found a great brand (King Arthur Flour) at our local Hy-Vee that was organic and also gluten free! 

So here is the trick:

•If it requests eggs, you can use 1/2 a banana for 1 egg

•If it requests butter, substitute with coconut oil

•If it requests milk, substitute with any non-dairy milk

Here is what we used:

1 box of Vegan GF Cookie Mix

1/2 ripe Banana

1/2 cup of Almond Milk

1/2 bag of Enjoy Life Chocolate Chips


Blend the banana

Beat the oil and half of the cookie mix

Beat in the banana and milk and continue to blend until fluffy

Beat in the rest of the mix until blended well, you can add a little bit more milk if its too dry.

Bake on a cookie sheet with parchment paper for 10-12 minutes on 350°

Take them out of the oven and let them cool for 5-10 minutes and enjoy!
