Fresh Quinoa Salad

Fresh Quinoa Salad (Vegan)

Rarely do I find a quinoa salad out in restaurants that I enjoy. Until one day in catering we came across the most delicious Quinoa Salad from Zea's in New Orleans! I liked it so much that when we got home I called them and asked the ingredients so I could make my own! This recipe is different from Zea's but it is equally as delicious! 


Ingredients:

1 cup of Red Quinoa 

1 cup of White Quinoa 

1 Large Cucumber

2 Large Carrots

1 Medium Sweet Onion

1 Medium Tomato

1 cup of Spinach

1/2 cup of raisins

Dressing Ingredients:

1/4 Olive Oil

2 tbsp Rice Vinegar

1 tsp Smoked Paprika

1 tsp Dried Oregano

1 tsp Dried Parsley

1 tbsp Honey

 


1. Cook the quinoa the night before if you can, let it cool in a bowl in the morning until you are ready to make the salad. Note: We make our quinoa in the rice cooker and it couldn't be easier!! 

2. Mix all of the sauce ingredients together in a large bowl.

3. Chop all of your veggies finely and add them to the sauce.

4. Add the raisins to the sauce and veggies.

5. Mix in the quinoa

6. Add salt and pepper to taste
