Homemade Tomato Sauce

I grew up eating spaghetti on a regular basis! I loved it and I still love it. My parents make the best homemade sauce. However, it usually has some kind of beef or sausage. So, I set out on a mission to make yummy chunky spaghetti sauce without MEAT! I'd say this meats the mark ;)

Serves 6

12 Crisp Roma Tomatoes

4 medium sweet onions

12 cloves of garlic coarsely chopped

1/4 cup dry parsley 

3 tbsp cup dry chives

1/4 cup coconut sugar

3 tbsp oregano

2 tbsp basil

1 tsp salt

1/2 tsp pepper

3- 6 oz cans of organic tomato paste (we use Muir Glen)

 

1. Chop onions (think chunky), sautée in 3 tbsp of coconut oil on medium high until translucent. 

2. Add chopped garlic. Continue to sautée until golden brown.  Add more coconut oil if it is dry. 

3. Add tomatoes- chopped in half then sliced thinly.  

 4. Add the rest of ingredients. 

5. Simmer on low for at least an hour or longer.

The longer it simmers the better the taste! Enjoy!
