Vegan Lemon Blueberry Bread

Once upon a time in a far away non-vegan land, I thoroughly enjoyed any baked good I could get my hands on! Lemon Blueberry Bread was one of them. I have wanted to try this in a vegan version for years and I finally did it! It took one try and it was so simple and easy and oh, so, delicious. I hope you enjoy this as much as we did!

For the Bread:

1 and 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp sea salt

1/3 cup coconut oil, melted

1 cup organic cane sugar

1 blended RIPE banana (egg replacer)

1/2 teaspoon vanilla extract

2 tsp fresh grated lemon zest

2 tbsp fresh lemon juice

1/2 cup almond milk (any non-dairy milk will work!)

1 cup fresh or frozen blueberries (I used fresh)

1 tbsp all-purpose flour (for the blueberries)


For the Lemon Glaze:

2 tbsp coconut oil, melted

1/2 cup organic powdered sugar (you can make your own!)

2 tbsp fresh lemon juice

1/2 tsp vanilla extract

1. Preheat oven at 350°F and prepare a 9"x5" loaf pan with oil or parchment paper.

2. Whisk the flour, baking powder and salt.

3. Blend together the melted coconut oil, sugar, banana, vanilla, lemon zest and lemon juice until well combined.

4. Slowly add flour mixture and liquid mixture in two batches (flour, then liquid, then the rest of the flour and the rest of the liquid).  Stop mixing as soon as it's just combined.

5. Rinse blueberries so they have just a moisture on them

6. Toss the blueberries in the tbsp of flour. (This flour coating will help prevent the blueberries from sinking to the bottom of your loaf while baking!!) Who knew!? :)

7. Add the berries to the batter and gently but quickly stir.

8. Pour batter into load pan and bake for 55 minutes, or until golden brown (check with a toothpick).  

9. Cool bread in the pan for 30 minutes.

10. Move to a wire cooling rack.

11. Prepare glaze by blending all of the glaze ingredients, drizzle on top, and ta-dah! Enjoy!
